Flank Steak is a tougher cut of beef that benefits from marinating. The marinade compliments its robust, beefy flavor. As an added bonus, flank steak is a great work night dinner. The meat marinates for 8 to 24 hours and only takes 11 minutes to grill. So easy!

Grilled Marinated Flank Steak

⅓ cup olive oil
2 cloves garlic, minced
2 tablespoons red wine vinegar
⅓ cup soy sauce
1 tablespoon Worcestershire sauce
¼ cup honey
½ teaspoon freshly ground black pepper
2 pounds flank steak

Add first 7 ingredients to bottom of a 1 gallon zip-top bag. Squish bag to combine. Score flank steak at ½-inch intervals, across the grain, on both sides of meat. Add flank steak to bag. Remove air and seal bag. Place in refrigerator. Marinate 8 to 24 hours turning over several times.

30 minutes before grilling remove flank steak from bag and pat completely dry with paper towels (Wet meat steams instead of searing). Pour marinade into a small saucepan and bring to a boil. Reduce heat to simmer. Discard foam that rises to the top. Continue discarding foam as it rises.

Heat Grill to medium high. Sear steak 3 minutes on each side until steak is well charred. Lower heat to medium (or place meat on cooler side of grill). Grill for 2 ½ minutes on each side (11 minutes total cooking time) Steak should register 125ºF for medium rare. Cook about 5 minutes longer for medium (135ºF). Rest 10 minutes before slicing. Cut in thin slices across the grain. Spoon cooked marinade over meat. Makes 6-8 servings.
