Mexican chorizo is seasoned ground pork sausage that is red in color from the chilies used as seasoning. When combined with ground chuck, chorizo gives plain burgers a flavor punch. Mexican chorizo is sold uncooked, with or without casings. Remove casings before cooking. To compliment the burgers, chipotle mayonnaise adds a spicy, smoky kick.
Ground Chuck and Chorizo Burgers with Chipotle Mayonnaise– makes 4 burgers
1 ¼ pounds ground chuck
6 ounces Chorizo, (Use a brand without fillers. I use Johnsonville.)
1/4 teaspoon iodized salt
Chipotle Mayonnaise
Hamburger buns, lettuce, tomato slices, onion slices, cilantro leaves, and condiments
Tear ground chuck into small pieces spreading evenly on a sheet pan. Repeat with chorizo placing it on top of the ground chuck. Sprinkle with salt. Divide meat mixture into 4 portions and shape into patties. (The patties will look like a calico quilt. After the burgers are cooked there won’t be any color variation.) Make a slight indention with your thumb in the center of each patty.
Grill and cook burgers to preferred temperature. Assemble burgers using buns, chipotle mayonnaise, lettuce, tomato slices, onion slices, cilantro leaves, and preferred condiments.
Chipotle Mayonnaise
½ cup full fat mayonnaise
2 chipotle chilies from 1 small can chipotle chilies with adobo sauce
1 tablespoon adobo sauce
1 tablespoon freshly squeezed lime juice
Salt and freshly ground pepper, to taste
Mix all ingredients in a food processor or blender until smooth. Enjoy!
