Italian Marinara Green Beens


Plain green beans can be boring. I like to spice things up with this Italian version. They are so good you will keep coming back for more!

Italian Marinara Green Beans

1 ½ pounds fresh French green beans
2 tablespoons olive oil
1 cup yellow onion, small dice
1 garlic clove, minced
1 (32 ounce) can whole plum tomatoes in juice (Italian style- San Marzano)
½ teaspoon oregano
½ teaspoon basil
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper

Wash and trim green beans. Place in a stockpot and cover with water. Add 1 teaspoon kosher salt. Bring to a boil then reduce heat to simmer. Cover and cook until tender. Drain and reserve.

Heat oil in a large stockpot over medium high heat until hot. Cook onions until transparent. Add garlic and cook 30 seconds. Crush tomatoes in can with a fork. Pour tomatoes and juice into stockpot. Stir in seasonings. Simmer 20 minutes. Add green beans, stirring to coat beans with marinara. Simmer until beans are hot. Makes 6-8 servings. Enjoy!
