Spice rubs add a welcome dimension to bland pork chops. The rub for these chops gets its smoky flavor from smoked paprika. Chipotle chili powder adds a little heat and there is just a hint of sweetness from the brown sugar. These juicy, flavorful chops will be the star of your cookout!
Grilled Pork Chops with Barbeque Sauce
1 tablespoon kosher salt
1 teaspoon ground coriander
½ tablespoon ground chipotle chili powder
½ tablespoon ground cumin
1 tablespoon smoked paprika
½ teaspoon ground mustard
½ tablespoon packed light brown sugar
4 thick cut, bone in, pork chops
2 tablespoon olive oil
Barbeque sauce (your favorite brand)
Mix dry rub (first 7 ingredients) together in a small bowl. Divide rub into 4 portions. 30 minutes before you plan to grill remove pork chops from refrigerator and dry with paper towels. Sprinkle 1 portion dry rub on both sides of each chop and rub in. Drizzle both sides of chops with olive oil and rub in.
Sear meat over high heat on grill making grill marks. Reduce heat to medium and cook until internal temperature is 145ºF. Remove chops from grill and let rest 10 minutes before cutting. Serve with your favorite barbeque sauce. Makes 4 servings. Enjoy!
