I love it when I can cook an entire meal on the grill! This is a great, grilled side dish. It looks so sophisticated on a plate. Char-grilled zucchini planks flavored with garlic-butter and Parmesan cheese. Enjoy!
Grilled Zucchini Planks with Garlic-Butter and Parmesan Cheese
4 large zucchini, about 3 to 4-inches in diameter
1 tablespoon olive oil
¼ teaspoon iodized salt
¼ teaspoon freshly ground black pepper
¼ cup unsalted butter, melted
3 teaspoons minced garlic
1 ½ tablespoons chopped fresh parsley
1 cup grated Parmesan-Romano cheese
Garnish: Torn parsley
Mix oil, salt, and pepper in a small bowl. Set aside. In another small bowl, mix butter, garlic, and parsley. Set aside.
Wash and dry zucchini. Remove ends. Cut lengthwise into ¼ to ½-inch planks. Brush olive oil mixture on both sides of zucchini. Grill first side over medium high heat until grill marks form, about 2 to 3 minutes. Flip planks over, brush top with butter mixture and sprinkle with Parmesan cheese. Grill 2 to 3 minutes until grill marks form on second side. (Parmesan cheese side should be facing up while cooking the second side.) Plate then garnish with parsley. Makes 6 to 8 servings. Enjoy!
