This is a great salad to take to a dinner party or just to eat at home. It is so colorful! Bright orange with flecks of green from the chives look fabulous on a simple white platter. In the winter, there is nothing better than the taste and smell of fresh navel oranges!
Navel Orange Salad with Ginger Dressing and Goat Cheese Crumbles– Serves 10
9 large navel oranges
Ginger Dressing (recipe below)
½ cup crumbled goat cheese
Peel navel oranges and cut into ¼ inch slices. Overlap in rows on a platter or in a circle on individual plates. Drizzle ginger dressing over orange slices. Garnish with goat cheese.
Ginger Dressing:
¼ cup unseasoned rice wine vinegar
⅛ cup canola oil
2 tablespoons snipped chives
¼ teaspoon salt
1 tablespoon packed light brown sugar
1 tablespoon fresh peeled ginger, grated with a microplane
Add all ingredients to a mason jar. Shake to combine.
