
These asparagus bundles look impressive and are simple to make. They cook in just 10 minutes and pair well with grilled chicken or beef. The recipe comes from a dear friend of mine, Michelle Ellis.
Asparagus Bundles
1 pound fresh asparagus spears
1 tablespoon olive oil
1 tablespoon balsamic vinegar
Prosciutto, 8- 10 thin slices
Preheat oven to 400ºF. Line a rimmed baking sheet with non-stick foil. Break tough ends off asparagus and cut the same length. Pour olive oil and balsamic vinegar in center of prepared baking sheet. Using the back of a spoon stir the two together.
Roll asparagus in vinegar and oil mixture; making more if needed. Move asparagus to one side. Cut prosciutto in half, lengthwise. Bundle 3 to 4 asparagus together by winding the prosciutto around the center of the stalk.
Space bundles on baking sheet so their sides are not touching. Bake 10 minutes. Tip: If you want an Asian flavor profile, use sesame oil and unseasoned rice vinegar in place of the olive oil and balsamic vinegar.
