Almond Poppy Seed Min-muffins are one of my all-time favorite muffin recipes. It is hard to stop eating these moist muffins! 

Almond Poppy Seed Mini-Muffins

3 cups all-purpose flour
2 ¼ cups granulated sugar
1 ½ teaspoons baking powder
1 ½ teaspoons iodized salt
1 ½ tablespoons poppy seeds
1 ½ cups canola oil
1 ½ cups milk
3 large eggs
½ teaspoon almond extract

Preheat oven to 350ºF. Line mini-muffin pans with paper liners and spray with non-stick spray. 

In a large bowl, mix flour, sugar, baking powder, salt, and poppy seeds together with a wire whisk. In another bowl, mix oil, milk, eggs, and almond extract together. Add wet ingredients to dry ingredients and mix, by hand, just until all dry ingredients are wet. Bake 10 -12 minutes. Makes 96 mini-muffins. Happy Baking!
