These chocolate covered eggs are a peanut butter lovers delight! Perfect for holidays, birthday parties, wedding or baby showers this candy can be made in a variety of shapes and decorated with icing, various shapes of sprinkles or remade candy decorations. The possibilities are endless!
Chocolate Covered Peanut Butter Eggs
3/4 cup softened unsalted butter
3 1/2 cups sifted powdered sugar
16 ounces creamy or crunchy peanut butter
1 cup marshmallow fluff
1 teaspoon vanilla extract
Two- 12 ounce packages milk chocolate or dark chocolate candy coating (These chocolate discs can be found in the cake decorating or chocolate chips aisle.)
1-2 teaspoons canola oil
Line 2 sheet pans with parchment paper. Using a mixer, beat butter and 1 cup powdered sugar together until light and fluffy. Add peanut butter, marshmallow fluff and vanilla extract. Gradually add remaining 2 and 1/2 cups powdered sugar to peanut butter mixture. Mix until all ingredients are thoroughly combined. The mixture should be soft and not too sticky.
Scoop golf ball size portions of peanut butter mixture (about three fourths of a 1/4 cup measure). Roll each into a ball using your hands. Place ball on parchment paper lined pan and shape into an egg. Base of egg should be 2 inches by 3 inches. Makes about 22 eggs.
Freeze eggs for at least 2 hours or until they become as hard as a brick. After eggs are frozen, melt one package of chocolate candy coating in a small bowl according to package directions. Gradually add enough oil so melted chocolate pours out of a spoon in a steady stream. Only remove 4 eggs from freezer at a time to prevent them from thawing. (Thawed eggs will bend and break when they come in contact with warm chocolate.)
Roll eggs, one at a time, in chocolate and place on a new, clean piece of parchment paper or turn used parchment paper over and use the other, clean, side. Refrigerate 30 minutes to set coating. Repeat process with second package of chocolate candy coating and eggs. Tip: For variety use 1 package of milk candy coating and 1 package of dark chocolate candy coating to make 11 milk chocolate eggs and 11 dark chocolate eggs. Decorate as desired. Enjoy!
