2 pounds sweet potatoes, washed and cut into 1 inch cubes
1/4 cup Maple syrup or pancake syrup
1/4 cup melted unsalted butter
Kosher salt and Freshly ground pepper, to taste
Spread cut sweet potatoes in a single layer on a foil lined, non-stick sprayed, rimmed baking dish. Drizzle maple syrup and melted butter over sweet potatoes. Bake at 425 degrees F for 25 to 30 minutes until tender. Stir occasionally while baking so they brown evenly. Sprinkle with salt and pepper if desired.
