Baby Kale Caesar Salad with Chicken

The last time Doc and I were in California our family dined at a restaurant that only served salads for lunch. I ordered an updated version of chicken Caesar salad made with baby kale instead of romaine lettuce.

This recipe is simplified and uses ingredients purchased premade at the grocery store. Assemble the salad in advance and take it to work the next day or serve to your family for supper! Enjoy!

Baby Kale Caesar Salad with Chicken

5 ounces baby kale
1-1 ½ cups pulled rotisserie chicken
Caesar dressing, store bought
Parmesan cheese, shaved in 1 to 2-inch thin slices, store bought
¾-1 cup croutons, store bought

Layer kale, chicken, Parmesan, and croutons in a bowl. Serve with Caesar dressing. Makes 2-4 servings.
