Spring Salad with Strawberry Balsamic Vinaigrette


It is my favorite time of year when strawberries are in season. In East Tenessee our locally grown favorite, Scott’s strawberries, are now available. This salad is just bursting with flavor.

Spring Salad with Strawberry Balsamic Vinaigrette– Makes 4 salads

4 cups spring salad mix
20 strawberries, washed and dried
1/3 cup crumbled feta cheese
1/3 cup chopped pecans toasted in a 350ºF oven for 5 minutes then cooled

Place 1 cup of spring salad mix on 4 plates. Arrange 5 strawberries on each plate. Sprinkle salads with crumbled feta cheese and toasted pecans. Drizzle Strawberry Balsamic Vinaigrette on each salad. Enjoy!

Strawberry Balsamic Vinaigrette

2 tablespoons strawberry preserves
1/4 teaspoon Dijon mustard
1/8 teaspoon freshly ground black pepper
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1 tablespoon light tasting olive oil

Mix preserves and Dijon mustard together. Add remaining ingredients.
Mix to combine. Refrigerate any leftover vinaigrette.
