I like to eat turkey all year long. The problem is I don’t have time to bake, brine, stuff, or slather flavored butter under turkey skin except on Thanksgiving Day! My solution is a boneless turkey breast. This slow cooker recipe only has 3 ingredients and is perfect for work night dinners. It even comes with gravy! My friend, Lisa Smalling, serves this turkey on Thanksgiving Day to save her oven for side dishes.

Slow Cooker Turkey Breast with Gravy
3 pound boneless turkey breast, thawed
1 cup (33% less sodium) chicken broth
1 stick unsalted butter, sliced
Place all ingredients into a 5 quart slow cooker (keep netting on turkey so it won’t unroll). Cook turkey on low heat 4 to 6 hours or until internal temperature is 165ºF. Prepare gravy according to gravy packet directions. Remove netting from turkey and cut into slices. Makes 8-10 (1-inch) slices.
