Strawberry season is my favorite time of year! This salad is just bursting with flavor.
Spring Salad with Strawberry Balsamic Vinaigrette
4 cups spring salad mix
20 strawberries, washed and dried
1/3 cup crumbled feta cheese
1/3 cup chopped pecans toasted in a 350ºF oven for 5 minutes then removed from baking pan to cool
Strawberry Balsamic Vinaigrette (Recipe Below)
Place 1 cup of spring salad mix on 4 plates. Arrange 5 strawberries on each plate. Sprinkle salads with crumbled feta cheese and toasted pecans. Drizzle Strawberry Balsamic Vinaigrette on each salad. Makes 4 salads. Enjoy!
Strawberry Balsamic Vinaigrette
2 tablespoons strawberry preserves
1/4 teaspoon Dijon mustard
1/8 teaspoon freshly ground black pepper
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1 tablespoon light tasting olive oil
Mix preserves and Dijon mustard together. Add remaining ingredients.
Mix to combine. Refrigerate any leftover vinaigrette.
