
This is my Christmas variation of Cracker Candy made with white chocolate, pistachios, and dried cherries. Ho, Ho, Ho!
White Christmas Cracker Candy
40 Saltine Crackers (use the salted ones)
1 cup unsalted butter, no substitutions please
1/4 teaspoon iodized salt
1 cup packed light brown sugar
1 (12 ounce) bag white chocolate chips (I use Ghirardelli)
1/2 cup roughly chopped pistachios
5 ounces dried cherries
Preheat oven to 400ºF. Line a rimmed baking sheet with foil then with a sheet of parchment paper. Place saltines, sides touching in rows, in pan. In a medium saucepan, bring butter, brown sugar and salt to a full rolling boil (that’s when stirring won’t stop the mixture from boiling even in the middle of the pan). Set timer and boil 3 minutes, stirring constantly.
Remove pan from heat and pour praline sauce over saltines. Quickly spread sauce with a spoon over all saltines. Place pan in oven and bake 5 minutes. Remove from oven. Sprinkle white chocolate chips evenly over crackers. Wait 5 minutes then spread melted chocolate chips over surface of crackers with a knife. Sprinkle evenly with pistachios and cherries. Gently press toppings into white chocolate. Freeze until hard. Break or cut into pieces. Store in zip-top plastic bags in freezer. Hide your personal stash behind the peas so no one will find it! Makes about 24 pieces. Enjoy!
