Quick Cuban Black Beans
2 teaspoons olive oil
¼ cup (¼-inch) dice yellow onion
¼ cup (¼-inch) dice green pepper
1 teaspoon minced garlic
1 (15 ounce) can black beans with juices
⅛ teaspoon ground cumin
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
In a small skillet bring heat olive oil over medium high heat until rippling.
Add onion and green pepper. Cook, stirring frequently until onion is transparent.
Add garlic and cook 30 seconds. Pour into a small saucepan.
Add black beans, cumin, salt, and pepper to saucepan over medium high heat. Bring to a boil, cover, and simmer 10 minutes. Enjoy!
