Umami Chicken

Umami, or savory is one of the five basic tastes. Sweet, Sour, Bitter, and Salty are the other four. Umami rich sauces such as soy sauce, fish sauce and Worcestershire sauce add savory flavor to this marinade. When acidic ingredients, sugar and spices are added to this umami rich marinade all five basic tastes are experienced. The result is tasty chicken!

Umami Chicken Marinade– 6 servings

½ cup olive oil
½ cup balsamic vinegar
¼ cup Worcestershire sauce
¼ cup soy sauce
2 tablespoons lemon juice
¾ cup light brown sugar
1 tablespoon fish sauce
2 tablespoons Dijon mustard
1 teaspoon freshly ground black pepper
2 teaspoons garlic powder
1 tablespoon dried onions
2 teaspoons dried rosemary
6 boneless chicken breasts

Mix all ingredients except chicken in a 1 gallon zip-top bag. Add chicken. Marinate 4 to 24 hours in refrigerator. Remove chicken from bag. Reserve marinade. Grill until internal temperature is 165ºF. Remove from grill and let rest 10 minutes before cutting. While Chicken is on the grill pour marinade into a small saucepan. Boil for 3 minutes to kill any germs. Reduce heat and simmer until desired thickness. Serve sauce with grilled chicken.
