Citrus Infused Salmon

Valentine’s Day is almost here!
If you are planning a romantic dinner for two at home this year, try this recipe for salmon.
It has a delicate citrus flavor with just a little heat from the jalapeno.
If you have never used fennel before don’t be afraid to try it.
Some people say it tastes like licorice but I don’t think it does.
It adds a subtle delicious flavor to the fish.
Fennel looks similar to celery. It has a bulb and stalks.
You can find it in the organic vegetable section of the grocery store.
Just use the bulb portion of the fennel and discard the stalks.

Citrus Infused Roasted Salmon for Two

1 navel orange, sliced thin
1 lemon, sliced thin
One 3 inch jalapeno pepper, sliced, keep seeds
One fennel bulb, sliced thin
6 stems fresh dill
¼ cup olive oil
Two individual portions of skinless salmon
Kosher salt and freshly ground pepper

Preheat oven to 275 degrees F. Prep vegetables, herbs and citrus fruit.
Layer half of ingredients in an 8 X 8 inch baking dish and season with kosher salt and pepper.
Top with salmon slices and pour olive oil over fish.
Layer remaining half of ingredients on top of the salmon.
Bake for 40 minutes. Salmon will be medium rare.
The fish will still be slightly opaque but cooked through.
