Grilled Cilantro Lime Chicken Skewers

This is an impressive dish for a dinner party with friends or game day fare. Marinate chicken overnight in the refrigerator then grill the chicken the day of the event. For a dinner party serve the chicken skewers with black rice and steamed snow peas. For game day fare make chicken sliders. See recipe below. Enjoy Friends!

Grilled Cilantro Lime Chicken Skewers– serves 4 to 6

3 tablespoons soy sauce
3 tablespoons fresh lime juice
Zest from one lime
1 tablespoon vegetable oil
1/2 cup honey
2 inch square piece of ginger, peeled and roughly chopped
1 teaspoon kosher salt
1 tablespoon Sriracha
1 /4 cup cilantro leaves
2 pounds skinless chicken breasts cut in 3 inch chunks
wooden skewers
Garnish with lime slices and fresh cilantro leaves

Add all ingredients but chicken, wooden skewers and garnish ingredients to a 1 gallon size zip-top bag. Seal bag then mash contents to combine. Remove 1/4 of the marinade to use as a finishing sauce over cooked chicken. Store reserved marinade in the refrigerator until ready to use. Add chicken to plastic bag and reseal. Marinate overnight in refrigerator.

Before grilling, soak wooden skewers in water for 30 minutes then thread chicken on skewers. Grill chicken on medium high heat for 10 to 15 minutes or until the chicken is cooked through and juices run clear. If the chicken starts to burn because of the high sugar content of the honey, reduce grill heat. Place chicken on a platter and cover with foil. Let rest for 10 minutes.

Garnish: Warm reserved marinade in the microwave
and spoon over top of chicken.
Serve with additional cilantro and lime slices.

Grilled Chicken Sliders
For grilled chicken sliders: On toasted slider buns layer  chicken, a drizzle of honey, crisp lettuce leaves, sliced tomato, and lime cilantro aioli. To make the lime cilantro aioli: Mix mayonnaise, fresh lime juice and chopped cilantro. Plate sliders on a platter with a bottle of Sriracha on the side.
