
Just in time for summer, this salad is refreshing!
Mediterranean Cucumber, Tomato, Feta, and Kalamata Olives Salad with Vinaigrette
Vinaigrette
2 Tablespoons red wine vinegar
2 tablespoons freshly squeezed lemon juice
1 tablespoon finely snipped chives
1 teaspoon dried oregano leaves
1 garlic clove minced
1 tablespoon Dijon mustard
1/2 tablespoon honey
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground pepper
4 tablespoons olive oil
Add all ingredients to a mason jar, screw on lid, then shake to combine.
Mediterranean Salad
2 English cucumbers
1 cup halved, multicolored grape tomatoes
2/3 cup pitted kalamata olives
1/2 cup crumbled feta cheese
Cut each English cucumber in half lengthwise, then cut each half lengthwise again. (You will have 4 strips per cucumber.) Cut strips into 1-inch pieces. Pour into a large bowl. Top with tomatoes, olives, and feta cheese. To serve: divide Mediterranean Cucumber Salad into 4 portions. Drizzle with Vinaigrette. Makes 4 servings.
