She was always making new concoctions with chicken and canned soup. The topping was whatever we had on hand. Potato chips, croutons, stuffing mix, etc. Casseroles are sort of like a warm hug. Hot and creamy with something crunchy on top. A one pan dish that you can assemble and bake in 1 hour or less. This recipe uses several shortcuts. Frozen vegetables, rotisserie chicken, and Red Lobster Cheddar Bay Biscuit Mix. I really like the biscuit mix topping. The recipe calls for 1 box of biscuit mix. The topping is crunchy on the top and soft on the bottom. If you prefer a thicker crust that is softer, use two boxes of biscuit mix. Chicken Cobbler with Red Lobster Cheddar Bay Biscuit ToppingCobbler Filling2 1/2-3 cups shredded rotisserie chicken2 (10.5 ounce) cans cream of chicken soup1 cup sour cream1/4 cup chicken broth from rotisserie chicken2 tablespoons melted butter12 ounces (3 cups) frozen mixed vegetables, thawed in microwave for 2-3 minutes1 cup shredded sharp cheddar cheese1/2 teaspoon iodized salt1/2 teaspoon freshly ground pepper1/2 teaspoon thyme leaves1/4 teaspoon onion powder1/4 teaspoon garlic powderPreheat oven to 350ºF. Spray a ceramic or glass 9 X 13-inch pan with non-stick spray. In a large bowl mix all ingredients together. Pour mixture into prepared pan. Set aside. Make Cheddar Bay Biscuit Topping.Cheddar Bay Biscuit Topping1 (11.36 ounce) box Red Lobster Cheddar Bay Biscuit Mix 1/2 cup shredded sharp cheddar cheese3/4 cup water1/4 cup melted unsalted butter1 pouch garlic herb blendPour biscuit mix into a large bowl. Stir in cheddar cheese. Add water and stir until dough forms. Dough will be very sticky and there may be small pockets of flour remaining. Don’t overmix! Spoon dough on top of filling in 1 tablespoon size portions. Smooth into an even layer. Dough will not completely cover the whole pan and will be about 1/2-inch thick. Bake casserole for 30-35 minutes. Topping will be brown on top. Filling will be bubbling. Remove from oven. Stir melted butter and garlic herb blend together. Brush butter mixture over Cheddar Bay Biscuit Topping. Let casserole rest 10 minutes then serve. Makes a 9 X 13-inch pan.
