Open Face Bacon and Tomato Sandwich with Garlic Aioli
Garlic Aioli (recipe below)
4 slices thick bread
8 slices cooked bacon
4-5 medium size garden tomatoes, sliced (3 slices tomato per sandwich)
2 tablespoons finely cut chives (I use scissors)
Kosher salt and freshly ground black pepper, to taste
Make Garlic Aioli (recipe below). Toast bread. Spread garlic aioli on toast. Layer bacon and tomatoes on top. Sprinkle chives over tomatoes and garnish with salt and pepper. Makes 4 open face sandwiches. Enjoy!
1/2 teaspoon minced garlic (a little garlic goes a long way. The flavor gets stronger if you make the aioli in advance and store in the refrigerator. I suggest making garlic aioli and using it immediately!)
1/2 cup mayonnaise
1 teaspoon freshly squeezed lemon juice
Mix all ingredients together in a small bowl. Makes 1/2 cup aioli.
