
Grilled peaches are the perfect side dish for grilled meat, pork or chicken adding just a touch of sweetness. They can also be served as an appetizer. I love that you can make something that looks and tastes spectacular in less than 15 minutes! Enjoy!
Grilled Peaches with Toasted Pecans, Goat Cheese, and Honey
1/8 cup chopped pecans
3 ripe freestone peaches
1 tablespoon olive oil
2 ounces plain goat cheese
Clover honey
Kosher salt
18 small mint leaves
Preheat oven to 350F. Bake pecans in oven for 3 to 5 minutes or until toasted. Pour pecans into a bowl to stop the cooking process.
Heat grill to medium-high heat. Cut peaches in half. Discard seeds and brush both sides with olive oil. Grill peach halves cut side down for 3-5 minutes or until grill marks appear. Turn peaches over and grill, skin side 2 minutes.
Place peach halves, cut side up, on a platter. Spoon small pieces of goat cheese over peaches then drizzle with honey. Lightly sprinkle with kosher salt. Scatter pecan pieces and mint leaves over the top. Makes 6 servings.
