This is a moist coffeecake with an apple filling and cinnamon streusel. The cake is tender and is perfect with a cup of coffee at breakfast. Doc and I like to re-heat the coffee cake for 10-15 seconds in the microwave. Enjoy!

Apple Coffee Cake with Cinnamon Streusel

Streusel

2/3 cup all-purpose flour
1/3 cup firmly packed light brown sugar
1 and 1/2 teaspoons ground cinnamon
1/8 teaspoon iodized salt
1/4 cup unsalted butter, cut in small pieces, at room temperature

Mix flour, brown sugar, cinnamon, and salt together in a medium bowl. Cut in butter with a pastry cutter or two knives until the mixture is the texture of sand. Reserve in refrigerator.

Filling

1/3 cup firmly packed light brown sugar
2 tablespoons all-purpose flour
1 teaspoon apple pie spice
2 cups Honeycrisp or Gala apples, peeled and chopped in 1/4-inch cubes 
3 tablespoons unsalted butter, melted

Toss brown sugar, flour, and apple pie spice together in a medium bowl. Add apples and stir to evenly coat with sugar mixture. Add butter and stir util combined. Set aside. 

Cake Batter

2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon iodized salt
1/2 cup unsalted butter, softened
1 cup sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
3/4 cup sour cream, at room temperature
1 tablespoon 2 % milk plus 1 tablespoon whipping cream

In a medium bowl mix flour, baking powder, baking soda, and iodized salt together. Set aside. With a mixer, beat butter and sugar together for 3-4 minutes. Add eggs, one at a time, just until blended. Add vanilla. In a small bowl mix sour cream, milk and whipping cream. 

With mixer on low speed, add flour mixture alternating with sour cream and milk  mixture like this: 1/3 flour mixture, 1/2 sour cream/milk mixture, 1/3 flour mixture, 1/2 sour cream/milk mixture, and 1/3 flour mixture. Scrape sides of bowl with a silicone spatula and mix briefly again. 

To Assemble Coffee Cake

Preheat oven to 350ºF. Spray an 8 or 9-inch baking pan with non-stick spray. Line baking pan with parchment paper (9-inches wide) letting excess extend from 2 sides of pan.

Spoon 1/2 of batter (2 cups batter) into pan in an even layer. Spoon apple mixture over batter into an even layer. Spoon remaining half of batter (2 cups) on top of apples in an even layer. Spoon streusel on top of batter in an even layer. Bake 45-50 minutes or until a toothpick inserted in the center comes out clean. Let coffeecake cool completely in pan. Remove from pan using parchment handles then transfer to a serving plate. Enjoy! Makes 9 servings.
