I was watching a comedian on the Internet last week. The subject was advice women give to men. For example, “Don’t cook bacon without a shirt on!”
I laughed and thought, “That would sting, hot grease on a bare chest. Not a good idea!” My mother would have taken a different approach. She would want to know why any man would be in the kitchen without a shirt on!
To all you bacon, cooking men out there, have no fear. This recipe for Pig Candy cooks in the oven. No shirt is required, unless my mom is around!
Pig Candy
3 teaspoons chili powder
1/2 cup packed light brown sugar
1.5 pounds thick cut bacon
Preheat oven to 400ºF. Line 2 rimmed baking sheets with foil. Place a wire rack in each pan. Place half of bacon on each wire rack making sure bacon strips do not touch. Stir brown sugar and chili powder together in a small bowl. Sprinkle mixture on top of bacon. Bake 20-25 minutes until crisp. (Cooking times may vary depending on the thickness of the bacon.)
Remove from oven and lay non-sugared side of bacon on paper towels to drain. Cut strips in half after baking, if desired. Makes 13 whole bacon strips or 26 half strips. Enjoy!
