Coconut Chocolate Chip Cookies

I am a huge coconut fan. These cookies are crisp on the edges and soft in the middle. For extra decadence re-heat individual cookies in the microwave for 10 seconds to re-melt the chocolate chips! 

Coconut Chocolate Chip Cookies

1 and 3/4 cup all-purpose flour
1 teaspoon iodized salt
3/4 teaspoon baking soda
12 tablespoons (3/4 cup) butter flavored Crisco
1 and 1/4 cups firmly packed light brown sugar
2 tablespoons Rea’l brand cream of coconut (It comes in a white plastic bottle.) 
1 tablespoon pure vanilla extract
1 large egg
1 cup milk chocolate chips
1 (14 ounce) package flaked coconut


Preheat oven to 375ºF. Line 2 baking sheets with parchment paper. Mix flour, salt, and baking soda together in a bowl. Reserve. 

Mix Crisco, brown sugar, cream of coconut, and vanilla together with a mixer until well mixed. Add egg and mix again briefly. Add flour mixture, mixing briefly until just blended. Stir in chocolate chips and coconut by hand. 

Scoop dough using a 2 and 1/2 tablespoon cookie scoop. Place 12 cookies on each cookie sheet. Bake 10 to 11 minutes or until lightly golden brown around the edges and pale in the center.  Makes 24 cookies. Enjoy!
