
Doc’s friend, Fred Goodwin, makes his famous “PAYDAY” candy every Thanksgiving. He makes at least three batches on Thanksgiving Day. Fred says his grandchildren eat the candy as fast as he can make it. He says he can’t even get it out of the bowl!
Fred Goodwin’s “PayDay” Candy
6 cups Rice Chex
1 cup Spanish peanuts
1 cup light karo syrup
1 cup granulated sugar
1 Tablespoon pure vanilla extract
Place sheets of parchment paper or wax paper on counter or in rimmed baking sheets. Mix Rice Chex and peanuts in a large bowl. Set aside. In a medium saucepan; combine sugar and Karo Syrup. Bring to a simmer over high heat. Cook just long enough to melt the sugar (It doesn’t take long). Remove from heat and stir in vanilla.
Pour mixture over Rice Chex and Spanish peanuts. Stir to coat evenly. Immediately drop candy into 2 to 3-inch patties on parchment paper or wax paper.. Cool completely then store in an airtight container. Tip: Things move pretty quickly so have everything ready! Enjoy!
