
This summer salad has numerous flavors and textures. Cold, baby spring mix. Juicy ripe peaches and garden tomatoes. Creamy mozzarella. Crunchy pistachios, fresh basil, and sea salt. You will experience a different flavor in every bite! Mike’s hot honey is my new favorite ingredient. It comes in a tiny trial size jar. Enjoy, Friends!
Peach and Tomato Caprese Salad
2 Tablespoons sherry vinegar
4 tablespoons olive oil
Pinch of Kosher salt
3 large ripe peaches, sliced in wedges
2 ripe garden tomatoes, sliced in wedges
5 ounces baby spring mix
8 ounces Ciliegine (small mozzarella balls) in lightly salted water
Garnish: Tiny drizzle of Mike’s hot honey, 10 basil leaves, salted roasted pistachios, Malden sea salt
In a medium bowl whisk vinegar, olive oil and a pinch of Kosher salt. Add peaches and tomatoes. Set aside for 10 minutes so the peaches and tomatoes can release their juices and flavor the dressing.
To plate the salad: On a large platter place spring mix in an even layer. Arrange peaches, tomatoes, and mozzarella balls artfully on top of spring mix. Lightly drizzle salad with hot honey. (Hot honey packs a flavor punch- use sparingly!) Sprinkle salad with basil leaves, pistachios and a small amount of finishing salt. Serves 8.
