Navel Orange Salad with Ginger Dressing and Goat Cheese Crumbles

This fresh orange salad has a delicious ginger twist.  Bright orange slices are flavored with green chives, a sprinkle of goat cheese, and a mild ginger dressing. In the winter, there is nothing better than the taste and smell of fresh navel oranges!
  
Navel Orange Salad with Ginger Dressing and Goat Cheese Crumbles

9 large navel oranges
Ginger Dressing (recipe follows)
1/2 cup crumbled goat cheese

Peel navel oranges then cut into  1/4-inch slices.  Overlap orange slices in rows on a platter or in a circle on individual plates. Drizzle ginger dressing over orange slices. Garnish with goat cheese. Makes 10 servings. Enjoy!

Ginger Dressing

1/4 cup unseasoned rice wine vinegar
1/8 cup canola oil
2 tablespoons snipped chives
1/4 teaspoon salt
1 tablespoon packed light brown sugar
1 tablespoon fresh peeled ginger, grated with a micro-plane

Add all ingredients to a mason jar. Screw on lid. Shake to combine. Reserve.
