Cobb Salad with Warm Bacon Dressing

Sometimes in the heat of summer Doc and I don’t cook. We eat salad for dinner. The best thing about this Cobb salad is you only cook one item, bacon. The rest of the ingredients are purchased at the grocery store. Enjoy!

Cobb Salad with Warm Bacon Dressing

Cobb Salad
8 cups romaine lettuce
2 cups pulled rotisserie chicken
2 large garden tomatoes, cut in wedges
1 avocado, sliced
6 hard boiled eggs, cut lengthwise in half
1 small wedge of blue cheese, sliced
4 slices bacon, cooked and crumbled (Reserve bacon grease for Warm Bacon Dressing)

Place romaine lettuce on a large platter. Arrange remaining ingredients decoratively in rows over top of lettuce. Serve salad with Warm Bacon Dressing.

Warm Bacon Dressing
Reserved bacon grease
1 tablespoon water
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon granulated sugar
¼ cup olive oil
Kosher salt and freshly ground black pepper, to taste

Place reserved bacon grease into a bowl. Add water, vinegar, mustard, and sugar. Whisk ingredients together with a wire whisk until combined. Gradually add oil in a thin stream, whisking constantly until dressing emulsifies. Season to taste with salt and pepper.
