For a light lunch try this deconstructed tuna salad. Containing tuna, fresh vegetables and kalamata olives this salad has a variety of colors, flavors and textures. Ready in just 10 minutes, it is a healthy alternative to mayonnaise laden tuna salad.
Balsamic Tuna Salad– serves 2
12 ounces solid white albacore or chunk light tuna, packed in water
10 snow peas
6 kalamata olives
1/2 yellow bell pepper, sliced
2 Kumato tomatoes, sliced in wedges
Balsamic salad dressing, your favorite
Freshly ground pepper
1/4 teaspoon dried celery seed
Crackers
Rinse tuna. Drain.Prepare vegetables. Drizzle a serving plate with balsamic dressing. Alternate chunks of tuna, vegetables and olives on top of dressing. Sprinkle with pepper and celery seeds. Serve with your favorite crackers. Enjoy!
