In the dead of winter when fresh vegetables are scarce,
I use fruit to make our meals colorful and interesting.
Orange Strawberry Salad
5 navel oranges
5 fresh strawberries
1 rounded tablespoon orange marmalade
1 tablespoon fresh navel orange juice
Peel navel oranges and slice crosswise into ¼ inch rounds.
Plate orange slices on a rectangular plate in a single row.
Slice strawberries in half.
Place strawberry halves decoratively beside orange slices.
In a small bowl squeeze 1 tablespoon orange juice from leftover peels.
Add juice to orange marmalade and stir to combine.
Spoon sauce on top of the oranges. Enjoy!
