These asparagus bundles look impressive yet are simple to make. They cook in just 10 minutes! They are delicious with grilled chicken or beef. The recipe comes from a dear friend of mine, Michelle Ellis.
Asparagus Bundles- makes 8-10 bundles
1 pound fresh asparagus spears
1 tablespoon olive oil
1 tablespoon balsamic vinegar
Prosciutto, 8- 10 thin slices
Preheat oven to 400ºF. Line a rimmed baking sheet with non-stick foil. Cut all asparagus spears the same length. Pour olive oil and balsamic vinegar in center of baking sheet. Using the back of a spoon stir the two together. Place asparagus on baking sheet. Roll asparagus in the vinegar and oil mixture; making more as needed. Move asparagus to one side. Cut prosciutto slices in half, lengthwise.
Bundle 3 to 4 asparagus together by winding the prosciutto around the center of the stalk. After you have bundled all the asparagus, space bundles on baking sheet so their sides are not touching. Bake 10 minutes. Tip: If you want an Asian flavor profile use sesame oil and unseasoned rice vinegar in place of the olive oil and balsamic vinegar.
